Almost Waldorf Salad
1 20 ounce can pineapple chunks or tidbits, in juice, drained
1 Each, Very Large Red and Green Apples, Cored and Cut Into Chunks
1 1/2 Cups Chopped Walnuts
1 Cup Sliced Celery
3/4 Cup Plain Non-Fat Yogurt
3 Tablespoons Brown Sugar
1 Teaspoon Lemon Zest
1/2 Teaspoon Vanilla
1/4 Teaspoon Cinnamon
Drain pineapple. Combine all ingredients and stir together. Serve well-chilled. If you would like to prepare this salad ahead of time, prepare the ingredients but do not mix. Store the apples with the drained pineapple bits in a plastic bag; that will prevent the apples from turning brown. Keep all ingredients well-chilled and mix together just before serving.
Note: Vanilla yogurt may be substituted for plain; omit the 1/2 teaspoon vanilla if using vanilla yogurt. Brown sugar Splenda may be substituted for the sugar; follow the directions on the Splenda package for this substitution.
