Cucumber Salsa

Cucumber Salsa

4-5 large cucumbers, finely chopped, and if seedy, remove seeds (I put in food processor and pulse until chopped to my liking.)
6 green onions, chopped
1/2 cup sliced jalapenos, chopped fine (I use purchased, sliced jalapenos in a jar at the store. If you use fresh from the farmer’s market, you may need to adjust to the heat of your liking. I also chop in food processor.)
1 bunch cilantro, finely chopped
4 tbls olive oil
juice of 2 fresh limes
1 tsp grated lime peel
1 tsp salt
1/4 tsp pepper

Mix all together and serve with tortilla chips.
