Recipe: Apple Braised Turnip Greens

Apple Braised Turnip Greens



1 bunch           organic turnip greens

1.5 medium     organic onion

½ clove            organic garlic

1 cup               apple not from consternate

¼ cup               apple cider vinegar

1 Tbs                white sugar

1 Tbs                olive oil

Yeild: 3   4oz portions


Small dice the onion, mince the garlic. Sweat them both on low heat with olive in a large pot, do not brown. Rinse the greens well, then cut off the very tip of the steams, throw away.  Rough chop the bunch and cook with the onions and garlic.  Once the leave wilt down add the apple juice and vinegar. Simmer on low for 1 hour, covered.  After simmering remove the lid and add sugar.  simmer for about 45 mins or until most of the liquid is gone.  Serve.
