Santa Fe Salad
2T Olive Oil
1 red bell pepper, diced
1 yellow bell pepper, diced
1 orange bell pepper, diced
1 medium onion, diced
1 16oz jar salsa (can be as spicy as preferred)
1 can black beans, drained and rinsed
10c Salad Greens
1c shredded cheese, Mexican Blend (optional)
Ranch Dressing to taste (optional)
- Saute the peppers and onion in the oilve oil until the peppers are soft and onion appears translucent.
- Add the salsa and black beans. Reduce heat to low and simmer for 8-10 minutes.
- Place salad greens in a bowl (or individual bowls for individual servings) and top with warm pepper and onion mixture.
- Add cheese and ranch dressing, if desired.
Makes 6 servings.
This recipe is very flexible and also works well as a baked potato topping or a warm relish to a grilled chicken breast or pork loin.
