Recipe: Santa Fe Salad

Recipe Name:
Santa Fe Salad


2T Olive Oil
1 red bell pepper, diced
1 yellow bell pepper, diced
1 orange bell pepper, diced
1 medium onion, diced
1 16oz jar salsa (can be as spicy as preferred)
1 can black beans, drained and rinsed
10c Salad Greens
1c shredded cheese, Mexican Blend (optional)
Ranch Dressing to taste (optional)


  1. Saute the peppers and onion in the oilve oil until the peppers are soft and onion appears translucent.
  2. Add the salsa and black beans. Reduce heat to low and simmer for 8-10 minutes.
  3. Place salad greens in a bowl (or individual bowls for individual servings) and top with warm pepper and onion mixture.
  4. Add cheese and ranch dressing, if desired.

Makes 6 servings.

This recipe is very flexible and also works well as a baked potato topping or a warm relish to a grilled chicken breast or pork loin.
