Recipe: Sweet Potato Fries

Recipe Name

Sweet Potato Fries



1 large             sweet potato

1 Tbs                olive oil

1 Tbs                fresh and organic thyme, chopped

½ Tbs               fresh and organic rosemary, chopped

½ tsp                Salt

Yields: 3 portions



First peel the sweet potato.  Cut thin slice off one side so that there is a flat surface the potato can lay on.  Then cut half inch slices off the potato. After that cut the slices into half inch sticks that looks like a fry.  Place in a sauce pan, fill the pan with cold water and bring to a boil, then boil for 3 mins. Take out of the water and allow to dry.  Then coat with olive oil and seasonings. Place on a baking sheet and bake for 10 mins at 350.  After baking broil them for about 5 mins keeping an  eye on them to not burn,  brown is ok. Serve.
