Boneless Pork Chops with Apple Chutney

 

Ingredients

3                      boneless pork chops

1 large             organic apple

½ medium       organic onion

½ clove            organic garlic

¼ cup               apple juice not from concentrate

2 Tbs                apple cider vinegar

1 Tbs                white sugar

2 tsp                fresh and organic thyme

1 tsp                fresh and organic rosemary

1 tsp                organic mustard seeds

2 tsp                olive oil

Instructions

Mince the garlic and small dice the onion.  Sweat the onions and garlic in the olive oil, in a small sauce pan for about 5 min.  Peel and dice the apple, add to the mixture on the stove and cook down for another 5 min.  Then add the apple juice, vinegar, thyme, mustard seeds and rosemary.  Simmer uncovered for about 30 mins, or until the apples start to break down.  If more liquid is needed and water.  When the apples start to break down add the sugar. And cook for 1 min.  This final product should look like a jam.

For the pork chop I cooked on the grill.  I try to grill whenever possible  because it is one to the healthiest cooking methods.  Charcoal imparts the best flavor but gas is easy and less time is put into it.  When grilling, the cooking time can change giving the circumstances.  Use your best judgment.

After the chops are cooked place a spoon full of the chutney atop the chop and serve.
